Recipe: Balsamic 'shrooms and onions

Some people just love to eat fungus. I don't. But, it's healthy for you. So, I often have some type of mushrooms hanging around the fridge from time to time. When looking to buy mushrooms, always remember:
 
1. Inspect color. No marks people!
2. Firmness. No wimpy guys!
3. Use em' fast! Don't store in fridge for more than 3 days.
 
1 pack of mushrooms (white/button) approx 10 sizable 'shrooms
1 large onions
1 tbl olive oil
3 tbs of balsamic
salt and pepper to taste
 
So here goes the simplest yummiest mushroom recipe.Wipe the mushroom clean with a damp towel. Saute sliced onions in pan until fully coated but not fully cooked! Add the sliced mushrooms. 3 tbs of balsamic vinaigrette. It can be flavored balsamic or regular. Here's the key last step: cook until you are unsure if it' cooked or not. Yes, read that again. Cook until you are unsure if it's cooked or not. Mushroom (just like tofu) maintains heat for longer than most other food items. So, it will continue to cook even off heat. I would say, about 2 mins cooking time tops of med/high heat. Enjoy and feel good about what you're eating!
